Well. I’m 3 days into recovering from food poisoning. I no longer wish to die, so that’s always a plus. I got out of bed almost like normal for the past two days. I’m still slightly nauseous but am overall on the mend. I haven’t been able to exercise all week, which usually negatively affects by writing, but I have to say I had way too much fun yesterday writing a few pages about camping with my family in the 70’s. I laughed until I cried and thought how overly cautious and over involved we seem as parents compared to our parents back in the day. You know, back in the day before sunscreen, healthy snacks, water bottles, and picture perfect campfires with s’mores. Before Pinterest, when camping trips actually had very little to do with kids at all. Back when nobody gave a hoot about whether or not the kids were having a good time. I have to say that I’m actually not sure we’re doing our kids any favors. But, I digress.
(Side note: If anybody has any slightly traumatizing camping stories from the 70’s, I’m all ears. You’ll have to wait a year or so to hear mine!)
Which somehow brings me to coffee cake. Maybe because I’m finally hungry? Who knows.
My girls were headed out this morning to a friends house to swim and I made them whip up some homemade goodies to bring to the family before they left. They’re used to this from me so they didn’t complain and got right to work. One of my friends had recently made this so it’s been on my mind, especially with all the berries so fresh and plentiful in the house lately. I was looking up the recipe and noticed how very bad the photo was so I decided to repost it with better photos and with the capability of easy printing. My very delightful youngest daughter made it with almost zero help from me and I had a few bites and must say that it is all shades of DELIGHTFUL. Hope you’ll try it this summer!
What you’ll need:
For the cake—
- 1/2 cup butter,softened
- 8 ounces cream cheese
- 2 ounces almond paste (or 1 t. almond flavoring)
- 2 cups sugar
- 4 eggs
- 1 1/2 c. flour
- 1 1/2 t. baking powder
- 1 1/2 t. salt
- 1 3/4 cups blueberries tossed in 1 T. flour and 2 T sugar
(Hint: I added about 1/2 cup of blackberries from our blackberry bush in addition to all the blueberries and it was divine!)
For the lemon glaze:
- 2 cups powdered sugar
- 2 T. lemon juice
- 2 T. heavy cream
- 1 T. softened butter
What you’ll do:
- Preheat oven to 350.
- Combine butter, cream cheese, almond paste and sugar; beat until fluffy.
- Add eggs and then flour, baking powder, salt and mix well.
- Then fold in blueberries.
- Bake in a well-greased bundt pan for 40-50 minutes or in 2 loaf pans for 40-50 minutes.
- While it cools, combine ingredients for glaze and stir until smooth.
- Drizzle over pound cake and enjoy!!
Best Ever Blueberry Coffee Cake {with Lemon Glaze}

Oh boy. Not technically “camping” but here goes. My best friend’s father used to crack us up as kids. He was and still is a character. He took us on a day hike up Mt. Washington in New Hampshire. The only supplies he brought were a package of M & Ms. One small individual size which we all shared for lunch. No water. We still laugh about that hike today. Hey, we survived. Today, we’d go on a day hike with enough supplies for a week. 🙂

Its such a shame that Vienna Sausages are no longer vogue…….a friend threw a Ticky Tacky party for her sister’s 50th birthday and took the center sausage out & used the can as a vase. I still laugh at that image!

I don’t have any camping trips from the 70’s because my hated camping. She only would go if it was in a hotel. It wasn’t until I met my husband that I understood what real camping was. But, I have to say that this blueberry coffee cake has got to be one of the best I’ve seen. I can’t wait to make it.

Oh my Goodness!!! That coffee cake looks de-lish!! I will be making that in the near future. And is that a Pampered Chef loaf pan? It looks so…loved. I need to use mine more and quit trying to keep it so clean looking.
My camping stories from the 70’s all have to do with way too much adult drinking & dysfunction that usually turned into knock down drag out family brawls. My mom was from a family of 14 kids who grew up in Northern California by Mt. Shasta (& Shasta Dam). Beautiful country for camping and picnics too.

My parents didn’t camp with us. But my daddy sure has some stories of when his daddy took him and his three brothers camping in the 50’s and early 60’s.
A whole year? I love your stories from your childhood. I guess I’ll have to wait on the book. 😉

70’s camping had to be the best! Our, hands down, favorite was the year we took a kitten camping with three of my mom’s sisters and their huge families. Why in heaven’s name we took a cat still escapes me and my mom just shrugs when I ask. Darn thing disappeared the last day, while we were packing and we left without her. Turns out she had gotten into the wheel well of my aunt’s car & they found her there (dirty & scared but alive) when they stopped for gas half way home……The whole family still talks about that cat whenever camping comes up.
The bread looks amazing and I have some blueberries in the freezer to use up before this year’s batch ripens. Can’t wait to try it.

My story isn’t from the 70s (I was born in the 80s), but almost 10 years ago my husband and I went camping, and rented a spot at a primitive site. As we were getting everything set up it dawned on us that we needed electricity for our air mattress. We snuck over to the regular site to blow ‘er up. We didn’t think about how big a mattress gets when blown up-we aren’t very good planners. We felt like criminals and set off running, however we couldn’t move very fast because a queen-sized mattress catches a lot of wind. We laugh now. 🙂

70’s camping stories? Where to begin…..at the Yogi Bear Jellystone park in northern Wisconsin? How about the yellow Chevy (‘customized’ by my dad before diy was cool) Van with NO seats – nope NONE, na-da, zip, zilch? We drove that sucker from the Chicago suburbs out to Washington State and back – took us THREE weeks and we camped each night(sleeping in the van)! The ‘Banana Van’ had an 8 track player and I believe my parents owned just TWO tapes – Fleetwood Mac and Linda Rondstandt…..oh, and it had a CB radio! I still cannot listen to Fleetwood Mac….

So sorry about the food poisoning! It is terrible feeling! Was invited to a ladies banquet recently and barely got home before being very sick from the salad…took three days to even begin to feel better. Glad you are on the mend!
My family camping episodes ended by the late 60’s thankfully! I was very small but I remember the last night in a tent while travelling out west. It was an old dark brown canvas tent and in the middle of the night a storm came up, heavy rain and wind…the tent leaked terribly and when my parents tried to fix it, the canvas tore wide open. My mother was crying, we were soaked by freezing rain and we spent the rest of the night in our “turquoise car” (not sure what model). But we stayed the rest of the trip in motels and never camped again! I am still a hotel holiday kinda gal! 🙂

Oh My Stars- I am laughing until I am crying thinking about camping in the 70’s!!!
I was one young wild girl back then. When Julie shared about drinking & dysfunction, I am right there. Alcohol everywhere you turned and other things as well- we were rafting on the Chattahoochee river- decided to paddle over & pull out. High diving rock. Going off that thing like nobody’s business. (never stopped to think there might be something in there we couldn’t see) After we were through & paddled out, some other folks pulled over & did the same thing. I’ll never forget this one guy, so drunk, he could barely stand, diving in way off to the other side. When he came up, half his face was split & torn & blood going everywhere! His folks trying to get him to the raft. Oh wow- he had hit this big rock/boulder that rest of us never got close to- getting caught in downpours in those heavy canvas tents. Those were some days. I wouldn’t trade them if I could 🙂

We technically never camped (slept outside) but we did spend summers at my cousin’s cabin near Lake Tahoe. We would play with the fire unattended, walk MILES through the forest unattended (as 8 and 9 yr olds), we regularly contracted poison oak from all this unattended hiking which we scratched and then proceeded to cover in calamine. Mostly we kids left the cabin after breakfast, came back to eat bologna sandwiches at lunch and then weren’t seen again until dinner.
I don’t remember anyone ever being horribly hurt or lost. I am sure we suffered many minor injurires but you mostly lived with those and carried on.
My kids are grown but even when they were little, I can’t imagine letting them play like that without some supervision. We were truly unsupervised.

Oh the camping memories! Trying to pitch the tent with what seemed like gail force winds with hungry family members yelling at each other, hahaha. It all turned out fine and we had wind burn instead of sun burn!

I haven’t camped a day since I have been an adult but when I was a child in the 70’s it seems like we camped often. We used to primitive camp at a place we called Stony Creek in SW Virginia. My memories were always my sister and I playing in, around and up 😉 the big creek with large rocks and boulders all day long. Once I forgot socks (yes, my mother let me pack my own bag) and had new tennishoes and came home with the worst blisters of my life! :/ We always had a big fire and slept in a tent. I also remember a couple of trips to the Outerbanks. My sister, cousin and I fought over who got to sleep in the pop up top of our Volkswagon van. 😉 If you slept up there you would wake up freezing in the morning!! :/ I remember getting sand in the tent and how miserable it was. Haha, may have been miserable at the time but I wouldn’t trade those great memories for anything, nor would I go camping again!! 😉 😛

Oh, I have a million stories but the one that comes to mind first….I dated my future husband for 2 years. His family camped, mine didn’t, but I took to it like a duck to water. Part of it was the non rule thing! Stinky old canvas tents, no toilets…only in the woods on a seat over a couple of logs, too much rum, junk food, baths in the lake, boat rides, fishing….Then marriage and babies…first issue disposable diapers, non sterilized bottles, mosquito bites, sun burns, exhausted kids sleeping early in tents by the fire, stories and laughter uncontrolled. This went on for years. As each child married and had kids the numbers got larger and larger, the cousins swam and played and loved each other. One night with the family of 20 snoozing, drinking, telling tales and joking around the fire, Gramma fell asleep in an old lounge chair.
After a meal of 4 bean, bacon, hamburger casserole she was eliminating excess air! All of a sudden BOOM…Gramma tooted and the chair collapsed and Gramma hit the ground. The grandkids, kids and Grampa laughed till we were sick. Fortunately, Gramma laughed with us! 40 years later, we all still love this memory. This camp is on Lobster Lake near Alexandria, Mn. my hubby and I bought the property long ago and still spend weeks each summer. In a camper trailer now. Last summer, 32 people in 5 campers, 4 tents and motel rooms and food provided each day by one family. Clean up provided by me, of course, the codependent gramma, mama, sister, auntie and friend. I miss your Mn. stories.

My 70’s camping trips, hmm, let’s see, beer (for the grow ups), card and board games, fishing poles and tubes, brawling family members all under a carpet of stars and in the glow of a camp fire, no one gave a rip if we were having fun and most times we were handed a bologna and cheese on soggy mayo white bread(oh the horror)along with a jolt cola and told to hit the road until dark. One year I got the chicken pox so the parents put all us kids in one tent to “get it all over with” we, covered in pink calamine lotion, scratched each others flesh off while they all played cards until morning, remarkable 70’s parenting. Best memories of my life. Another time my uncle thought a perm was a good idea, someone reported him to the park ranger, ” I just saw Richard Ramirez AKA “The night stalker” on a tube floating down the river! He was questioned by police as we all laughed from the shore. Now I’m laughing!:)

Hi Edie, I just discovered you and your blog and well, their are no words. You are a kindred spirit! We have a million things in common and I already have a girl crush on you!
With respect to camping, I have no personal camping stories. However, my husband belonged to a Father/Daughter camping group through our local YMCA called “Indian Princesses” when our girls were elementary age. (Name has since been changed due to P.C. issues) I used to just marvel at how excited my husband and the other dads would get with an impending camping weekend. The preparations, the excited talk with the girls about what activities they will be doing was just the sweetest thing. I later learned from another mom that the dads had an ulterior motive on those camping weekends. The Dads would plan non stop activities during the day to ensure that the girls would be so tired and passed out by dark. As soon as the girls were asleep, out came the beer, poker chips and guitars and they would party till the wee hours! Im pretty sure this is not the mission statement/ manifesto of the! The girls never knew so I guess it was a win/win for both.
